1 Mia brand Original 12” pizza crust
2 white onions
20gr grated Pecorino Romano cheese
ground black pepper to taste
200gr mozzarella cheese
4 tablespoons extra-virgin olive oil
Preheat the oven to 410° F (210° C).
For a tender crust, use a vented pizza pan or a cookie sheet. Clean potatoes, cut in round slices and blanch in boiling water. Drain and let cool. In a pan, cook the sliced onions with 2 tablespoons of olive oil. Remove from heat and let cool. In a deep bowl, add the blanched sliced potatoes, sliced and cooked onions, Parmesan cheese, a pinch of salt and ground black pepper and toss. Spread the preparation onto the pizza crust and add the mozzarella and Pecorino cheese. Bake for approximately 15-20 minutes until potatoes are golden. Drizzle with oil & serve hot or cold!
